Light Broccoli Slaw

  • 2 bags of organic broccoli slaw
  • ½ cup white vinegar
  • ¾ tsp salt or to taste
  • ¼ cup maple syrup
  • ¼ cup canola or olive oil
  • 1 cup pumpkin seeds (optional)
  1. Combine all ingredients except seeds, into a large bowl and mix until coated.
  2. Allow slaw to sit 15-20 minutes, occasionally stirring.
  3. Add pumpkin seeds just before serving for extra crunch.
The longer the salad is allowed to sit the more flavor will develop. Make this up to 2 days in advance for an easy side dish.
