Gluten Free Montasio Rosemary Pear Savory Biscuits

I’m so thankful for my family and friends.  I recently celebrated my birthday and I received some

wonderful gifts from my friends and family: TIME.

Some of my old college girlfriends planned a little get together.  Nothing big, they just came over for coffee and a playdate.  I didn’t tell them but they remembered it was my birthday and they showered me with flowers and coffee.  Then we sat and talked for almost 2 hours straight.  I loved it!  We ended up talking about nothing and everything all at once.  We were able to compared stories about our in-laws, adjusting to becoming a parent, how your stomach will never be the same after children and how that’s ok.  Catching up is fun!  
There’s something amazing about being around good friends.  No, not just good friends,  I mean great friends.  Friends for life.  I’m talking about the kind that have seen everything.  They’ve been there to dry your tears,  encourage you with something new or hold your hair if you’ve had too much to drink.  They’ve seen everything and still love you the way you are.  These are my friends.
It’s funny how our conversations have evolved from college.  We used to talk about really important things…like clothes, clubs and boys.  Now we talk about what’s really important like our husbands, children and family.  We’re still the same people we were in college, but better.  We appreciate each other a lot more even though we see each other less.  

Sometimes it seems like we’re never given quality time with our friends and families.  Life with a young family can be crazy busy.  It’s hard to set aside time to just enjoy the moment.  We’re always rushing to get things done. 
I was so happy I was able to spend some quality “special mommy time” with my oldest son.  We ended up getting out of bed at our usual time of 6:30am with nothing on our schedule.  We were able to eat breakfast together while everyone else was still sleeping.  We made the most of our time and played a game called “little chef”.  He actually help me create these biscuits.  I still had a lot of grated cheese so he wanted to help create something with it.  
If you haven’t see my previous posts,  Montasio Cheese is one of the Legends From Europe.  It’s an artisan cheese with a full rich nutty flavor.  I would say it’s similar to a better known Parmigiano Reggiano cheese.  Montasio is such a wonderful cheese!   So far the leftovers have been very versatile.  The kids love it too. 
We played the chef game and I pretended to be his assistant.  He was the boss and loved to order me around.  He thought it was the best game!  When we were finished baking, he ordered me to clean up the kitchen before Daddy would see all the mess.  ðŸ™‚   Like father like son I suppose…

I hope you enjoy these.  We loved making them together.  Spend some quality time with your family today.

Ingredients    preheat oven to 425 degrees

  • 2 cup all purpose gluten free flour*
  • 1/2 cup Montasio cheese
  • 1 organic pear
  • 1 tsp fresh rosemary
  • 1/2 cup palm shortening or butter
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp xanthan gum*
  • 1 (slightly less) cup whole milk + more for to brush tops
*conversion to gluten based diet: substitute regular wheat flour and omit xanthan gum.
Directions
  1. Peel and slice pear.  Reserve 1/3 for slices on top.  Chop remaining into bite size pieces.
  2. Chop fresh rosemary.
  3. Combine all dry ingredients.  
  4. Cut in shortening with a fork or use hands until shortening is pea size.
  5. Add milk, rosemary, and pear.
  6. Press dough between parchment paper to 3/4 inch thick.  Cut into circles.
  7. Transfer biscuits to a baking sheet lined with parchment paper. Brush tops with milk.
  8. Bake at 425 for 8-10 minutes.  Garnish with extra cheese and rosemary.  Serve warm!

    Rosemary and pear sounds like a really neat combination! I've never thought to use the two together before. Very cool.

      Thanks for commenting! The rosemary is subtle in these biscuits but gives them a nice depth of flavor. The pear adds a touch of sweetness too.
