I found some summer-ish inspiration from the weather. This mango smoothie is free of the top 8
allergens. Are you ready for spring to just get here? I was so hoping it would be here for more than just one day. We recently had warm day of, get this, a high of 52 degrees!
I almost about peed my pants I was so excited!! Almost.
My older son was at home, sick from school that day, so we couldn’t stay out too long. Most of the day we ended up moping around the house. Then I decided that it would be heathier for all of us to just get outside. We spent a solid 50 minutes in the stroller dodging puddles and potholes on our street.
It. was. heaven.
My son even commented on how he forgot what the nature smells like. And by nature he meant fresh outdoor air. He’s been cooped up all winter during school recess with -30 wind chills. I briefly talked with his teacher regarding how she’s dealing with all the kids with ants in their pants since they haven’t been able to go outside. She agreed the winter has been hard on the kids. And her. She didn’t need to say it. I don’t know how she can control 19 kids. I can’t control mine for 2 days alone. She is my hero.
Think about summer while you enjoy the smoothie. Maybe it will come sooner. 🙂
I ended up having to use my hand stick blender again. I still haven’t replaced the my poor food processor I killed awhile back. Did I tell you about my regular hand mixer? Yep. That bit the big one too. Proud to say I was able to get it smoking and everything. And then I was in denial. I let the smoke clear and decide to let it have the day off and put it back in the box. I tried it again later only to hear that fateful click… and then nothing.
R.I.P. all my kitchen appliances. My wish list of essential kitchen items is growing each day.

Ingredients
- 2 cups frozen mango chunks
- 1 cup cooked carrots
- 1/2 cup milk of choice
- 1/2 tsp cinnamon
Directions
- Boil carrots until soft. Allow to cool a bit if you want a cold semi frozen smoothie.
- Add remaining ingredients into a bowl and use a hand stick to blend. (Or use a food processor. I managed to kill my second one and still have not replaced it.)
- Serve while thinking of sunny summer day. 🙂
