This mint shake is a perfect dairy free copy cat of Shamrock Shake. It’s made from coconut cream, coconut milk and spinach to give it a lovely natural green color that is also Vegan.
A mint shake was one of my favorite treats growing up. I’d always look forward to the day McDonald’s started severing their famous shake. In between seasons, I would always order a custard mint malt at Culver’s. Now that I’m older, the whole lactose thing makes it too unpleasant to actually eat or drink regular ice cream or shakes.
My kids will have different memories of growing up which won’t include a real Shamrock Shake, but I’m OK with that. As long as they are happy and above all safe, I’m sure they’ll still build happy memories… Super ridiculously funny memories I might add.
Kids say the darnest things… Or at least mine do. The timing is always impeccable, shouting absurd things when there’s a lull in the background noise or silence.
If you remember waaay back to last year, Mr. Naughty had issues pronouncing words like ‘frog’ and ‘falcon’ (as in Millennium Falcon) and my personal favorite ‘microwave’. You can read all about it here. Essentially he twisted all of those words into profanity (and I don’t even swear anymore since I stopped working at the hospital.) He was only 2 at the time and now he’s talking even more at 3 years old. It’s been a while so let’s catch up on some silly phrases….
First off, Mr. Naughty is very aware of his surroundings and loves to ask questions…or more like SHOUT questions. 😀 (He lacks volume control, much like Austin Powers after thawing.)
Just the other day, we arrived at my older son’s piano lesson which is held at an art center. The center has a stage and hosts countless school plays, dance programs and assorted music lessons. On this particular day, a high school play was rehearsing along with some type of professional meeting in the lobby.
The moment we walked in we could smell the food from the conference, some type of seafood must have been on the menu. As we walk by the admission desk, Mr. Naughty shouts:
“It smells STINKY IN HERRRE! Like STINKY POOOP! Why is it so STINKY?”
The ladies sitting in the office burst out laughing while I quickly tried to quite him down trying to shhhing him. That of course backfired since he merely repeated it, louder, as if I hadn’t heard him the first time since I didn’t answer his question.
I died.
Kids are so unpredictable. And they have been some really sweet moments too…
I was reading to him and out of nowhere he stopped, pushed the book down and pointed his finger right in my face.
“I’m going marry you. Yep. I am. I’m just gonna use the ring and marry you, and Daddy, and Sir…” and he went on to list the entire family.
So sweet.
It makes up the not so sweet tantrums of not listening and being a little dictator and ordering me around. Right?
So here’s something sweet for all of you too! Here’s my take on a copycat Shamrock Shake that’s super easy and is dairy free. If you loved my no churn (no machine) mint chip ice cream, you’ll love this too.
Shamrock Shake Copycat-Dairy Free, Vegan dye-free

Ingredients
- 1 cup dairy free mint chip ice cream (minus chips)
- 1/2 cup coconut milk or favorite milk
- whipped coconut cream optional garnish
- chocolate shavings optional garnish
Directions
- Combine ice cream and milk in a blender and mix until smooth.
- Garnish with coconut cream and chocolate shavings
Notes: This makes only 1 shake and could easily be doubled or tripled. Make sure the milk you use is chilled as well as the coconut cream to make the ice cream.
