Celebrate any occasion with a Star Wars Jedi Mint Krispie bar. I used the force to create these gluten free treats. 🙂
Star Wars and boys just go together. Just like mint and chocolate. Those combination just seem got make sense along with a gluten free rice krispie bar that everyone loves too. Jedi Krispies are super easy and can be made in no time at all. I should know. 🙂 I had a very busy fun Spring break at home. My in-laws came and stayed with us for a whole week to celebrate Sir turning 6 years old!!

That number just doesn’t seem real.
Where does the time go? My baby is no longer baby or toddler. He really is a boy now. Sir loves running around playing with his Star Wars legos. He’s built the Millennium Falcon (Han Solo’s ship), 2 different Tie Fighters (small Empire fighter ships) and receive another ship (I have no clue as to the name or if it’s good guy or bad guy). Apparently, Star Wars is still a huge deal with kids (and my husband). My son knows all of the obscure characters and up until last weekend had never even saw the movie. It’s a guy thing. #AllMenLoveStarWars #TooManyCharactersToKnow
This year we didn’t throw a party for Sir. The timing was tough with Spring Break and his grandparents visiting. Instead, we had a super awesome, laid back family gathering that finished with a viewing of Star Wars: A New Hope.
I wanted to make something extra special for his birthday. I made a cake that I’m super proud of. You’ll have to wait a little longer to see it posted here (you can find it here now) but head over to Facebook for some sneak peaks. (hint: I made a Gluten Free Cake with Fondant!) It’s pretty intricate and time consuming but easy enough to make.
Since I was so busy with the cake, I totally ended up slacking on his birthday treat for school. Nothing wrong with that, I just really like to making things more homemade. Everyone likes a rice krispie treat right? I simply used the force and turned them into Jedi Mint Krispies with the addition of mint chips. To make these free of the top 8 food allergens, omit the mint chips (they contains small amounts of soy and dairy). I had some toothpick signs I found on clearance a while back that I used with a store bought Star Wars graphic for signs. I just glued a picture to make the Dark Side and Good Side.
I’ll admit, the whole Star Wars thing has grown on me. R2D2 has to be my favorite character, screams and all. I’m probably dating myself, but I remember being in high school when they re-released the original movies in the theatre. It was fun hanging out with a bunch of (immature) high school kids all excited for a movie. Varsity Blues was another fond one that comes to mind.

Star Wars Jedi Mint Krispie Bars

Ingredients
- 6 cups gluten free rice krispies
- 3 T non hydrogenated organic palm shortening
- 10 oz bag mini marshmallows
- 1/2 cup Enjoy Life Chocolate Chips
- 1/2 cup mint chips (I used Guitarrd)
Directions
- Melt marshmallow and shortening in a glass bowl in the microwave.
- Mix with rice krispties.
- Gently fold in chips to avoid breaking/melting.
- Press into a 13×9 baking pan lined with parchment paper. Allow to cool before cutting. (Use your best Lightsaber.)
