Chocolate donuts are something special. Or donuts of any kind really. Chocolate donuts are our favorite by far but the S’mores donut comes in a close second. Is it just me or do donuts usually show up on lazy days like the weekend? Or if you’re like us, just about any day in Summer. 😀
Are you ready for school? I’ve gotten spoiled with a laissez-faire schedule for Summer. We wake up eat and ‘what do you feel like doing’ kinds of days. I’m ready for the learning to start but school is hard on kids. 8 hours of attention for anyone is difficult.
Confession: I would get so bored in college lectures I fell asleep many times. Not proud to admit it, but true. Still managed to get top grades though. 😛

Ingredients
- 1/2 cup teff flour
- 1/2 cup gluten free hybrid flour
- 1 cup milk of choice
- 1/3 cup cocoa powder
- 2 T oil (I used avocado)
- 1/2 cup applesauce
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1 tsp guar gum
Chocolate Glaze
- 1 cup Enjoy Life Chocolate Chips
- Donuts– Combine all ingredients and mix well. Pour into donut pan and bake for 12-15 minutes or until toothpick comes out clean in the center. Allow donuts to cool on a wire rack.
- Glaze– Melt half to chocolate chips in the microwave. Mix in remaining chips and stir until melted.
- Drizzle melted chocolate on top. Enjoy!
Notes: These freeze extremely well. Just allow the chocolate glaze to set and place in the freezer for quick grab and go. And since these only contain 2 T of oil for the entire batch, I’d say it’s healthy enough for a regular breakfast treat.

Feel free to use xanthan gum in place of guar gum for all recipes if you don’t have guar available.?

Another whole grain gluten free flour could be used. Brown rice is probably the easiest to find but buckwheat or sorghum would work as well.

You claim these are Soy free but they have Guar Gum, which is soy. I have a severe allergy to soy and have found this out the hard way. I can substitute, but you need to be careful what claims you make.

Karin- Guar Gum DOES NOT CONTAIN SOY. I agree with your statement, “you need to be careful what claims you make”, and further more need to address your statement that “guar gum, which is soy”, is simply NOT true.
Guar gum is derived from the guar bean sometimes called locust bean, and is classified as a legume but is not soy and does not contain soy. I searched the internet for soy-guar and found that many sources could be contaminated with soy protein during manufacturing—again, not that guar naturally contains soy.
My son also has a soy allergy and I would not give this to him if it contained soy. With any food allergies reading labels and calling specific brands personally is the only way to find if the product is clear of allergens. We use a pure guar gum for all gluten free recipes that need binders because we react to Xanthan gum which is commonly grown on foods like wheat, soy and corn.
Impulsive unresearched comments like this do more harm than good.

I have a non-stick pan and didn’t need any. Adding extra oil would help ease the removal of any stubborn donuts!

We recently found out that our son has wheat and egg allergies. Do you think I could use one cup of Bob’s Red Mill gluten/wheat free 1:1 baking flour to sub for the teff and gf flour? Also, since Bob’s contains xanthum gum, I suspect I could skip the guar gum?
Thanks on advance. I’m so excited to make these for bub; he will be thrilled!

Hi Dana, Yes-I think Bob’s 1:1 would work ok for this recipe and your are correct in not adding extra gums. This may turn out slightly gummy but will probably still taste wonderful.
